I used cucumber ribbons, some freshly picked herbs like mint, coriander and basil.
I had omelette with salmon for breakfast the other day... but I didn't have peas in the house, so instead
used cucumber, cream cheese and dill.
I use the cucumber and vinegar analogy.
I've never tried it with carrots — I usually
use cucumber — but I will try it this way next time.
If you didn't want to eat raw courgette (zuchinni), then you could
use cucumber instead.
If you're
using a cucumber that has a very waxy or bitter skin, you can certainly peel them first, but if you can find the English ones I recommend those, as they have less water content and won't water down the dressing as much.
