Hi Matt, I use curly kale as it is widely available in the UK.
I use curly kale because it gives the coating something to grab onto and has lots of crispy crevices when it's done.
You can use curly green leaf, or red leaf lettuce, or a combination of the two, but don't substitute Romaine, or Iceberg lettuce.
I know a lot of people use curly parsley in tabbouleh (and I'm happy to eat it that way) but I just find flat leaf to be a little bit milder and more tender, and I use it in so many things it ends up being the only kind I buy.
