I used golden beets for this recipe instead of regular beets.
Instead of potatoes / carrots / peas,
we used golden beets / dried cranberries / pecans, and then topped them with a chili cream sauce.
But
I used golden beets, because, duh, they're golden.
I used golden beets, so the salad has a beautiful yellow - orange color to it.
If you are trying to do a beet sneak attack I would definitely
use golden beets so that the flavor is milder!
If
you use a golden beet, like I did, the ice cream will be a warm butterscotch color.
Notes: I recommend
using golden beets in this recipe because they don't stain quite as badly as the red variety and they're also milder in taste.
