Coconut oil must be solid from the get - go if you're going to
use it in a recipe like this one where the fat needs to be cut into the flour.
As for this recipe, I often cook up a big batch of beans or grains to use the whole week — then
use them in recipes like this I made it with fresh veggies and previously cooked, refrigerated beans and it was spectacular!
I chop them up and
use them in recipes like carrot soup, onigiri rice balls, and sometimes I even purée them into hummus.

I have just cooked the blueberry muffins as you say they are
like a liquid batter but they haven't turned into muffins they are just blueberry slop
