I love to
use the plain kefir as a buttermilk substitute in baking and pancakes.

This time I ditched the faux cheese and
used plain goat's milk
kefir.
1-1/4 c. stone ground wheat flour 1-1/4 c. stone ground rye flour 1/2 c. coarse ground cornmeal 1 t. kosher salt 1 t. baking soda 1-1/4 c. vanilla almond milk + 1/4 c.
kefir or
plain whole milk yogurt + 2 T. white or cider vinegar -LCB-
use all milk if no
kefir on hand; or sub what original recipe calls for; 1-1/4 c.
plain whole milk yogurt -RCB- 1/2 c. molasses
Because the vanilla was too sweet, I
use half vanilla and half
plain (Naked), along with
kefir and fresh fruit.
Filtered water (NOT tap water — you'll kill your
kefir grains; make sure the water is filtered for chlorine and fluoride) Organic sugar (1/4 cup)-- I
use plain white organic cane sugar but you can
use other forms of sugar such as Sucanat or palm sugar Optional: Molasses (1 tsp)-- You can omit this if you are
using the egg shell Piece of an egg shell (half of the egg shell will do)
Milk
kefir can be enjoyed
plain, flavored, or
used in many recipes, like salad dressing, bread, and ice cream.
I
use kefir (fermented milk) because I can't find buttermilk where I live, but I've also
used plain yogurt with skim milk.
Using protein - rich
plain Greek yogurt or
kefir means you can skip the protein powder, but otherwise, water or coconut water and pea protein powder is a great nondairy alternative.
You may
use plain, whole milk goat
kefir or homemade goat yogurt in place of the milk portion of the milk if raw goat milk is not available in your area.
I love the goats milk because it gives the spinach a little extra flavor and the
kefir makes for a creamier side, but you can always
use regular
kefir or just
plain milk.
I
used plain unsweetened
kefir (can be replaced with buttermilk) from Lifeway and it worked out perfectly.
I love drinking
kefir plain as well as
using it in my smoothies.
Rinse the
kefir grains well (I soaked mine for a few hours in
plain water, then rinsed several times) then start a new batch of
kefir using white sugar and molasses.
Perfect for you and your furry best friend to share, we recommend
using only
plain kefir (nonfat, lowfat, or whole milk) and all - natural peanut butter with no added sugar or salt.
Kefir did take some getting
used to, but I now LOVE it
plain and strong!
I ate it with
plain yogurt a few times but I ran out of yogurt and purchased organic
kefir recently so I thought I would
use that.
I'm always looking for ways to
use up my
kefir since I don't love the taste of it
plain.
