We «re going to
use the second head of Romaine lettuce this weekend in an entree
salad with the yellow squash (shaved), the second tomato, the last cucumber (along with

Basically, instead of the pasta as the «filler» for your
shrimp salad, you will
use hard boiled eggs instead.
If you want to double the dressing recipe below,
use half of it as a marinade for some grilled chicken or
shrimp and toss either of those into the
salad for a full meal.
I
use griddled squid in this
salad, which provides nice chewiness and squid's distinct sweet seafood flavor, but really you could
use any protein, like
shrimp, tofu, an egg, or nothing at all.
It's filled with your usual
salad suspects — carrots, radishes, tomatoes, romaine — and topped with cooked
shrimp, avocado and crumbled bacon (I like
using a nitrate free chicken bacon I've discovered from Al Fresco).
To keep the peanut dressing low fat, I've
used PB2 powder in this Satay
