Without sacrificing the fabulous ricotta cheese (I

I
used fresh
mozzarella pearls on top of the dish but you can
use the bagged,
shredded version that is mixed into the tortellini bake if you want.
I
use the store bought
shredded bags of cheese for the
mozzarella and parmesan.
If you're
using shredded cheese: Top each bread slice with a bit of your tomato and
shredded mozzarella mixture.
I still
use full - fat ricotta and
shredded mozzarella because if you make me choose, I'll pick cheese over pasta any day.

used store bought pizza sauce and
shredded six - cheese Italian fancy

Top each English muffin with about 1 Tbsp pizza sauce (I
used a generic jar of pizza sauce) and about 2 Tbsp
shredded mozzarella.
Then I added the
shredded chicken and still
used the full 125g ball of

For the cheese, you could
use a cubed ricotta salata, fresh
mozzarella, or goat cheese, or try
shredded Parmesan instead of the feta.

used some «Mexican blend»

mozzarella (I have a potato allergy and it is strangely difficult to find
mozzarella without potato additives around here) It gives a stronger taste, but I love it and I am glad it worked.
Also,
using the same
shredded mozzarella, add a little italian seasoning, form into a shell &
use that to hold some low carb meatballs.
