Having made this recipe or a similar version for several years I found that instead of buying
turkey wings at 3.69 per pound (this years price), I can buy a whole fresh
turkey in Nov. or Dec.,
use the
wings, drumsticks, giblet package (no liver) and other bones etc..
Wrap both of the
turkey legs and
wings in bacon,
using 2 slices per leg and 2 slices per
wing to completely cover them.
directions If
using a pressure cooker, add onions, carrots, celery, garlic, thyme, parsley stems, bay leaf, peppercorns, coriander seed,
turkey necks, backs,
wings to the pressure cooker.
However, if you can't get your hands on any ham hocks, you can also
use a leftover ham bone or even smoked
turkey wings.
