I use pecans typically, but I have also
used walnuts too.
A good way I could say to
use walnuts too, and have kids eat pumpkin and walnuts in one bite.

using another nut in these before but I imagine that almonds or
walnuts should work really well

substituted maple syrup for the bourbon (and
used the lesser amt of sugar so that it wouldn't be
too sweet) and threw in some chopped
walnuts... we'll see how it turns out!
I
use walnuts when making my own pesto,
too.
Ok the first time I made it I
used 4 med / large bananas and the end product turned out a little
too undone / wet so I tried it again with 3 bananas, and I
used a 1/3 cup of pure maple syrup, added some
walnuts and dear god it is amazing with just the right amount of sweetness and extremely moist.
I
used almonds because that's what I had, though you can do pine nuts or
walnuts too.
I like to
use the same nuts as the ones in the pesto (I
used Marcona almonds here), but you can experiement with pecans and
walnuts too.

I
used oats and some shredded coconut because I didn't want my cake to be
too nutty since the cream is made of nuts
too, but if you want, you can
use almonds,
walnuts or any other nuts you like.

For those of you who are having trouble with it being
too dry, I followed all of the directions exact except I added
walnuts and
used regular salt.
I also
use cashews instead of the traditional pine nuts for a more wallet friendly option but you can
use pine nuts, or
walnuts too if you prefer those.
I subbed sunflower seeds for the
walnuts since I didn't have any on hand and ended up with extra grated carrot that I threw in,
too and
used cinnamon instead of ginger.
