This recipe
uses Plantain Flour and Sweet Potato flour which really work well for me for baking.
My taco shell recipe uses only plantains and my tortilla recipe
uses a plantain and yucca blend.

use 1 teaspoon of dried thyme) Salt to taste 2 — 3 tablespoons coconut (or vegetable) oil 4 — 5 bunches of fresh coriander (cilantro) for garnish
Remember to
use a sweet pineapple and a very very ripe
plantain.
And while
plantains can be
used in stews or baked and served alongside fish and meat, my favorite way of eating them involves double frying them into tostones and dipping them into mojo, a garlic and olive oil condiment.
