This easy Vegetarian Pot Pie
uses frozen pie crusts to make a delicious dinner!
Start by
using a frozen pie crust.
I cheated and
used a frozen pie crust but I added the apricot preserves.
(I did also
use frozen pie crusts).
The filling is really fairly simple, and if
you use a frozen pie crust like I did (insert - surprised - emoji - face - here), it's as easy as 1 -2-3.
If
using a frozen pie crust, you do not need to blind bake it.

Oat Bran leftovers strained out of liquid can be
frozen and
used in future cookies,
pie crusts, etc..
I haven't
used frozen pie shells in years (I usually
use a homemade
crust or a Pillsbury refrigerated one).
If you don't want to
use a packaged
pie crust, you can make a few from scratch ahead of time and
freeze them and same goes for your
pie filling.
If you are
using a homemade
crust,
freeze the
crust first, then press a sheet of aluminum foil into the
crust to keep the sides of the
pie crust from falling down as it cooks.
While conceivably you could
use a prepackaged folded
frozen pie crust (just get four of them and cut them to fit the rectangular sheet pan, and cut out the shapes), I strongly encourage you to try the home made
crust recipe I've included for this
pie.
Take a margarita from cocktails to dessert by
using limes and tequila in a chocolate -
crusted frozen pie.
dark chocolate (I
used 72 % cocoa) 1/2 tsp cinnamon 1/8 tsp cayenne pepper 2 tbsp cocoa nibs, optional (I
use these) 1
pie crust (thaw if
frozen) 1 cup pecan halves
I
used a gluten - free
frozen pie crust from Whole Foods, which tastes just like a regular
crust.
Use your favorite
pie crust recipe, or buy a
frozen or refrigerated
crust if you're in a hurry.
I am considering tinkering with this recipe to make individual
pies for Thanksgiving (and
using frozen fruit and pre-made
pie crust that I'll thaw and cut for the individual portions).
I also
used Trader Joe's
frozen pie crust (much easier than making my own!)
I
used my own recipe for 10 inch
pie crust but
used the filling pretty much as written except that I
used a bag of the
frozen sweet potatoes that get microwaved in the bag and then mashed.
It seems most
used a
frozen pie shell (one did
use her own
pie crust recipe).
I've been making this tomato
pie for years,
using Hellman's mayo and a store bought
frozen crust.
The only changes I made were that I
used more zucchini than tomatoes (our CSA just gave us A LOT of zucchini) and I cheated and
used a
frozen pre-baked
pie crust that I already had in the freezer.
Store - bought
frozen pie crust can be
used or if you have the time, make your own
pie shell from scratch!
