You could
use breakfast sausage or maple sausage, but I wanted to kick mine up to a whole new level and spiced the pork with
jerk seasoning.
The wood adds to the flavour of the
jerk chicken but the pimento (allspice) seeds
used in the marinade mimic this very well.
The recipe is perfect as is, but if you want variety, I found it is also delicious with carrots in place of broccoli, and
using cajun or
