My
meal planing starts by browsing my freezer for what looks good or in the case of ground
turkey — what I have a bunch of and needs
used up.
In this recipe I
use ground
turkey to keep this
meal on the lighter side, but you could
use ground beef to give is a heartier flavor.
This vegetable curry is perfect for
using up some of your
turkey leftovers from Thanksgiving, or you can make it without the
turkey for a completely vegetarian
meal as well.
We
used turkey sausage since I don't eat pork, and it was wonderful: the quintessential winter
