I have yet to try the daiya cheeses, but this looks like a really fun way to use it I haven't had mac and cheese in a really long time!!!

If you ever plan to go vegan, I would recommend Boca or Daiya for that because Morningstar uses cheese and eggs in a lot of their products.
I like the Daiya products I've had so far, but haven't used the cream cheese yet.
