I also wanted to see if there was a difference in using chocolate chips instead of the chocolate «disks», which I have
used chocolate bars chopped up and Hershey's Bliss chocolates, sliced thinner for the «disks».
It's best to use these where you want the chocolate chip shape and
use chocolate bars for melting.
I have been
using the Chocolate Bar palette quite a lot recently because of its rich warm tone browns.

I
used a vegan
chocolate bar for this batch and roughly chopped it into chunks, but chips always work great, too.

Bar recipe and OH MY WORD!
Or high - quality
chocolate to the crap Nestle and Hershey
use to coat their candy
bars.
And yes I would
use the Plugra and Panther
bar chocolate (85 %) by endangered species (and no I have no affiliation with that company other than loving the
chocolate).
When ready to serve, top with shaved
chocolate by shaving the side of a bittersweet
chocolate bar using a standard peeler to create delicate
chocolate curls.
I
used a
bar of 71 % bittersweet Camino organic
chocolate and it it worked quite well.
In one cake I even
used one
chocolate bar with chile pepper and cinnamon.
I am going to
use the caramel to make the
chocolate chip cookie
bars so maybe they will be sweet enough to counter the strong caramel taste.
Place
chocolate into microwave safe bowl (if
using bar chocolate, chop into chunks first) and heat for 30 sec.
