You should be able to melt the chocolate at a low temperature if you use a double boiler (
use a glass bowl over a pot of steaming water).
So instead
I use a glass bowl and a vented microwave cover.
Over a double boiler *, preferably
using a glass bowl over top of the pot as it heats more slowly, add the dark chocolate and cream for the filling.
You will want to
use a glass bowl that is narrow enough for completely dipping the pops.
Every so often I still have some lumps at this point, so I place the bowl (
I use a glass bowl) over a pan of simmering water and whisk until all the lumps are gone.
I used a glass bowl (though I suppose it should be shatterproof if due to the heat - not an expert on this), and I would recommend using a wooden spoon instead of a whisk.

I got to
use my egg separator, and one of my favorite little
glass bowls.
