In keeping with my healthy sandwich / pita idea, I decided to
use ground
chicken breast to make the curry - spiced
chicken patties because it's really
lean and takes on whatever flavors you throw at it, in this case: garlic, ginger, onion, jalapeno, scallions, curry powder, and other spices.
And,
use the
leanest part of
chicken, such as
chicken breast.

We like this particular burgoo recipe because it
uses leaner cut meats; here we see sirloin steak and pork tenderloin
used in place of the usual shank or stew meat and boneless
chicken breast instead of
chicken legs or thighs.
Because
chicken breast is lower in fat and a great
lean protein, I usually
use chicken breast over
chicken thigh in my meal prep
chicken recipes.
For example,
use egg whites instead of egg yolks,
lean meats such as turkey
breast and
chicken breast instead of fatty cuts of meat, and 1 % low fat or non-fat dairy products instead of whole milk dairy products.
For my protein I
used organic
lean chicken breast and cut it up into cubes to put in a skillet.
