Would
using milk chocolate chips instead of semi-sweet ones work well?
Using milk chocolate chips work and taste the best with pumpkin.
The chocolate being used is dark chocolate, so already you're doing better than if you were
using milk chocolate.
However, I found that the chocolate dominated the delicate macadamia flavour so I'd suggest either
using milk chocolate and more macadamia paste or simply placing a whole roasted macadamia nut into the centre of a ball of ganache instead.
I found a delicious recipe from Green & Blacks for Salt Water Truffles
using milk chocolate but I've adapted the following recipe using dark chocolate and an optional teaspoon of honey.

If
using milk chocolate reduce the amount of cream in the truffle base to 1 cup.
I will top the cupcake with a small dollop of milk chocolate and
using the milk chocolate as glue to allow a small piece of twix to adhere to the cupcake.
Although I made mine with 70 % chocolate, you could also
use milk chocolate for a more indulgent treat — Green & Black's milk almond chocolate is next on my list to use!
I used a milk chocolate bar, as dark chocolate can be a little firm to make curls.
Cassie's Tip: There are so many ways that you could adapt this to make it your own:
use milk chocolate or white chocolate chips in addition to or instead of the butterscotch; use Rice Krispy's Cereal instead of oatmeal (or any of your favorite cereals); add chocolate chips to the crust mixture; add peanuts to the crust mixture; sprinkle nuts, chocolate chips, or drizzle caramel or chocolate sauce over the caramel mixture... see what I mean?

I used milk chocolate with white chocolate and dark chocolate drizzle for the fun and childhood - reminiscent Oreo truffles, and dark chocolate for the super rich cookie dough truffles, but feel free to use whichever kind of chocolate you prefer and mix it up however you want!
