In September 2010, François Payard and Marlon Abela of Marlon Abela Restaurant Corporation (MARC) opened FPB, a casual eatery on West Houston Street in downtown New York City, offering a range of freshly baked goods at affordable prices, all prepared from the chef's own recipes and made
using organic flour and ingredients of uncompromising quality.
I ended up
using organic flour.
I had to add a little extra almond milk (I'm guessing because
I used organic flour which from reading the comments I guess needs more moisture) and I baked them for 12 minutes instead of the recommended 8 - 10 min.
I used organic flour and used about 1 and 3/4 cups as organic flour needs more moisture (so I use less of it), added 3 tablespoons of cacao and used whittakers dark Ghana chocolate which is 72 % dark and accidentally vegan.
Ingredients: 2-1/2 cups (12.2 oz / 354 g) unbleached all - purpose flour (
I used organic flour) 1-1/4 cups (5.0 oz / 142 g) cake flour 1 tbsp.
I prefer to
use organic flours if I can find them.
Laura
used an organic flour mixture and substituted regular milk with the coconut kind.
You could even
use organic flour if you wanted to.
Not exact matches
There isn't a particular brand which I
use, I just buy
organic buckwheat or brown rice
flour which are both gluten free.
I
use organic stone - ground whole - wheat in this bread along with a bit of unbleached white bread
flour.
Based on what I had, I
used plain ol' yogurt, skim milk and white
organic pastry
flour and mini chocolate chips.
Currently, all Rudi's breads are made with the finest
organic wheat
flour and are formulated with families in mind — especially kids —
using proven award - winning recipes.
I do recommend
using only
organic flours as I always do.
I substituted
organic rolled oats (ground to
flour iin my coffee grinder) for the oat bran and
used organic stone ground spelt
flour in place of the whole wheat.
Another random note: he recommended never
using bread
flour - always
organic all - purpose unbleached.
With
organic potato flakes as our base, we make our delicate dough
using almond
flour and cage - free eggs as the primary ingredients.
I had no at all trouble with the dough being too sticky, I'm not sure if it's because I
used 3 1/3 cups
organic unbleached
flour (worked great btw) or if it has something to do with the exceptionally dry weather we've experienced over the last few months.
We
use all - natural ingredients you can pronounce, such as brown rice
flour and

We have evolved from all - purpose

using alternative options including almond
flour,
organic blue cornmeal and coconut
flour.
Also, I
used organic bread
flour and the dough was very sticky and a little challenging.
These items are made
using a base of
organic chickpea
flour, providing an exciting addition to any plant - based diet.
Soy oil is generally separated from flaked soybeans — leaving defatted meal that's ground into
flour —
using a chemical called hexane, one of the volatile
organic compounds that constitutes natural gas, crude oil and gasoline.
A couple of things though, I
used almond
flour / meal (1 1/3 cup as recommended) and instead of honey or maple syrup, I
used organic brown rice syrup,
used the same amount as listed for maple syrup, AND I added a handful of unsweetened
organic coconut flakes for added texture and flavor... turned out PERFECT!!
