Deconstructed Hummus
Salad 1 garlic clove, minced 3 tablespoons extra virgin olive oil 3 tablespoons tahini 1 - 2 tablespoon lemon juice (start with a tablespoon, add more to taste if needed) 1 tablespoon water salt, to taste 1 15 - oz can chickpeas, rinsed and drained 5 oz

uses lentils instead of meat and real fresh spices instead of
packaged taco seasoning!
I love to
use leftover rice and beans for
salads like this but if you are cooking the brown rice, cook more so you can
use it for another meal (cook as per directions on the
packaging).

package of pre-cooked ones at Trader Joe's]:) I've never cooked my own or cooked anything
using lentils, typically just toss them into a
salad - this is a great meal!

If you have some chicken on hand you can
use that in this
salad, or rotisserie chicken, or even
packaged grilled chicken strips.
Granted, the month was June, when the selection is especially plentiful, but gone were the hefty price tags associated with

used to shell out a ton for.
