I
used one large Empire
apple (I made a half - recipe)- I've never
shredded an
apple before and wasn't sure texture-wise how it would turn out so I sliced it thin and then sliced into matchsticks.
This seems very close but our cake had
apple pieces throughout — so do you think I could
use half a cup of oil and 3 cups of
shredded apple would be an even substitute for the 4 cups of applesauce?
I
used shredded red
apples because I feel they are better integrated in a cake batter than chopped fruit.
To make the base of this recipe, all I did was
use quick organic oats,
shredded coconut, unsweetened coconut yogurt, ground flax,
apple pie spice, a little lemon, some stevia, and some grated carrots.

For this recipe we're
using a combination of

Grate or
shred the
apples into the bowl - I
use a hand - held grater, but a food processor works fine too.

I
use this to make raw zucchini and raw yam chips, and to
shred apples for my favourite raw breakfast cereal.
You're going to want to
use metal (or sharp - edged) cookie cutters here, it will help cut through the
shreds of
apple / carrot more easily.
Using a clean dishtowel or paper towels, place the
shredded apple and sweet potatoes and squeeze until liquid is released.

I didn't have brown sugar, so I
used 1 1/2 cup of white granulated sugar and I
shredded one
apple and folded it in with the carrots.
Also, I
used the carrot -
apple pulp from my juicer for the
shredded carrots.
Using a box grater - shredder,
shred the
apple on the fine holes into the saucepan.
Note: Since I am from the «waste not / want not generation» I have also sent in a recipe which
uses the grated carrots and
apple shreds that are left over...
