To prevent this, go for a wider
sliced tomato and

using fresh

If you're not
using mozzarella, flip
slices and roast for an additional 10 minutes or until cooked through.
If you are
using mozzarella, remove sweet potatoes from the oven at 8 minutes, top with a
mozzarella slice, return to oven, and bake for remaining 2 minutes or until the cheese is melted.
I made these tonight
using sweet & spicy Black Bean Hummus by Eat Well Embrace Life, fresh
sliced avocado, shredded
mozzarella and grilled chicken.
I
used my favorite pizza toppings for my little pies: Homemade pesto, fresh baby spinach, thinly
sliced grilled chicken, toasted pine nuts,
mozzarella and Asiago cheese.
Anyway, we
used pesto for our sauce and a light layer of
mozzarella cheese, topped with thinly
sliced tomatoes and it turned out great!
I adapted the recipe from Melissa's Southern Style Kitchen, she
used halved zucchini with Gouda cheese, I
sliced mine and
used Mozzarella.

And yes, I normally
used sliced cheese on my pizza because it's sometimes cheaper — my store had
