use regular
dates but you may have to
soak them first to soften them as they need to be really soft and moist for this recipe!

You will get very sweet syrupy water and you can also blend the
dates after 24h have passed (or earlier is in hurry) so you will have a thicker syrup as well (I normally do this to

dates I

After reading all the comments I decided to add a few extra tablespoons of maple syrup, I didn't have medjool
dates so
used regular ones but added 4 - 5 extra and
soaked them in boiling water for 20 min.
I
used regular pitted
dates and they worked fine without
soaking.
Instead of the
Date Nectar which I can't find in our Whole Foods store, I can make my own by
using 1/2 cup of Medjool
dates soaked for 24 hours in 1/2 cup of water.
The second time I
soaked the
dates in boiling water to soften them and then I just
used a blender stick to blend the
dates with sweet potato and maple syrup (much easier than a processor) I also made a budget version and
used regular cocoa powder, 1/2 honey 1/2 maple syrup, no pinenuts - just 1/2 cup of coconut flour and 1/2 cornflour, I also added chopped walnuts.
I would say to
soak dates in hot water first if
using Medjool
dates!

after doing a little research on how to
use a
date in a recipe, i narrowed my options down to making a
date - paste (which is similar to agave),
soaking the
dates in hot water for hours (no thanks ~ i'd like cookies sooner rather than later), or chopping them up in the food processor (sign me up).
* if
using dried
dates I usually
soak them in boiling water for 5 mins before
using — this softens them up so they blend easier.

My
dates were very sticky but older
dates can dry out so if yours are not sticky,
soak them in hot water for 20 minutes and then drain before
using.
All you need to do is blend your
soaked figs (or you can
use raisins or
