Instead I made a bunch of the patties
using vegan mozzarella and vegan cheddar which I blended in.
The pizza had mozzarella on it, which sort of defeated the purpose of keeping the pesto vegan, but you could
use a vegan mozzarella substitute (much better than a parmesan substitute) or just use the pesto on pasta.
She often uses less (like 1 1/2 cups) and won't even
use the vegan mozzarella if we don't have any.

vegan dairy

use flax eggs instead.
I'm not allergic to cheese, thankfully, so I
use a part - skim
mozzarella and parmesan combination, but if you have allergies or are
vegan, you could top this with any number of vegetables or alternative cheeses.
I mean, I've
used tapioca starch to make
vegan mozzarella and it was the ingredient that turned watery cashew cream into thick and stretchy mozz.
