Hi Natalie, I've only ever made this recipe with vanilla powder before so I'm not too sure about the flavour or ratios for vanilla extract but I imagine that it should work well too.
The vanilla extract may have made the mixture slightly too fluid so I would recommend trying the vanilla powder instead next time!
I made a batch & i had some left over so i made a smoothie bowl out of it, added some vanilla protein powder to make a meal (that thickened it up too), sprinkled some banana chips, pumpkin seeds / pepitas, sunflower seeds & whole cashews on top.

I'm planning to make some substitution (pumpkin instead of sweet potatoes, because here in Italy sweet potatoes are difficult to be found) and I was wandering if chocolate protein powder instead of vanilla will work too... What do you think?
