I made coconut
milk ice cream not long ago during my
vegan kick, but it was too intense for me.
I recently made a
vegan salted caramel out of coconut sugar and coconut
milk (and some other stuff) that I used in an
ice cream recipe.
I'm not
vegan, but LOVE
ice creams and try to cut my absurdly high double
cream consumption and especially glad it uses rice
milk, which I much prefer to soy.
There used to be a delicious
vegan ice cream they sold over here but then suspiciously they disappeared off the face of the earth, it was coconut
milk based with various tropical flavours and it was SOO good.
Some early attempts using bananas didn't pan out quite as I'd hoped, but Marla's
Vegan Chocolate and Cherry
Ice Cream inspired me to change course and use coconut
milk for the base instead.
