I have always had this thing for
cheesecakes, especially in summer, and you've got many
cheesecake recipes on the blog, like the honey lavender
cheesecake, the salted caramel apple
cheesecake, or other
vegan, gluten and lactose free versions such
as the
vegan raspberry
cheesecake (a readers» favorite), the raw mango
cheesecake, or the yuzu coconut
cheesecake, to mention just a few of them.
When «Childhood Favourites» was selected
as this month's Sweet Adventures Blog Hop theme the aforementioned creations ran through my mind immediately... and in a fit of not particularly unexpected re-invention, lemon custard ended up on top of
cheesecake and both were made
vegan, soy and refined sugar free.
Welp, one day in my little kitchen, these
vegan cheesecake bars were born, and
as a result I am forever a happy girl.

But after one trial of that I decided it would be much more wonderful and delicious
as a
cheesecake cup — with layers of date - sweetened toasted cashew butter, tangy berry chia jam, and great fluffy mountains of this immensely dreamy
vegan cheesecake filling.
As someone who makes raw
vegan cakes for a living, I enjoyed the
cheesecake and loved some components of it but it wasn't «to die for».
