I just made these
vegan using earth balance
instead of butter, 2 tbs ground flax mixed with 3 tbs water for egg, and dairy free
chocolate chips (no white
chocolate chips).
I use Earth Balance margarine
instead of coconut oil, and I typically add either walnuts or
vegan chocolate chips (sometimes both).
Carob
chips instead of
chocolate chips,
vegan butter and baking Stevia
instead of the coconut sugar.
Now if you can not find
vegan white
chocolate chips, here's what I'm thinking... - Use regular
chocolate chips instead because berries +
chocolate = yum!
I just pulled these out of the oven and they are delicious!!!! I didn't have high hopes because I used canola in place of the coconut oil and tapioca starch
instead of potato starch but these are easily the best
chocolate chip cookies I've ever had and I'm not even
vegan.
I had
Vegan mini
chocolate chips and used those
instead.
In my version I used butter and real
chocolate,
instead of
vegan margarine and carob
chips.
I did make a few substitutions though — I used coconut oil
instead of the palm oil (i added about a teaspoon more coconut oil once I had mixed everything together because the mixture was a bit too crumbly and dry for my liking) and I also added a teaspoon or so more of honey due to the dryness of the mixture... I didn't use any white
chocolate chips, and used
vegan dark
chocolate that i chopped up because i didn't have «
chips» as such....
Instead of chickpea and coconut flour, both of which give the soft, cake - like texture, we're using oat flour in these
vegan chocolate chip cookies.
For the grand finale, I topped this
vegan ice cream sundae with allergy - friendly mini
chocolate chips and maple almonds (sliced almonds can be used
instead).

instead of grapeseed and then add cinnamon, cocoa powder, rolled oats, and Enjoy Life
