I made a loose variation on these (subbing beet pulp and almond flour for the millet) and I used cashew
cream in place of the ricotta & three flax
eggs to make them
vegan > not as perfect as the original, but turned out pretty well.

The tricky part is Kori's
vegan, meaning she chooses not to eat any animal products, including
eggs, butter, and
cream — the holy trinity of baking ingredients.
If you wish to make the ice
cream vegan, omit the
egg yolks and substitute 1/2 tsp.
But for
vegans, it's usually impossible to enjoy, thanks to the anchovies,
cream and
eggs.

At the moment there's a big focus on clean eating and gluten free,
vegan recipes, but I don't want to strictly stick to that now and then regret it in a months time when I make a towering chocolate fudge mountain cake built on a foundation of
eggs and whipped
cream.
I purposefully chose a very basic, 1 - bowl
vegan cupcake so that I wouldn't have to deal with
eggs,
creaming butter, or a bunch of bowls because I knew adding all the mix - ins would be plenty of work.
