For those of us who are following
vegan, paleo, gluten - free, dairy - free, and grain - free
diets, the holidays with all of their glorious baked goods can bring even more
challenges.
The biggest
challenge with
vegan and vegetarian
diets is getting enough protein.
I read «Eat and Run» by Scott Jurek last month, and decided that I would
challenge myself to try and eat and train like Jurek this month (albeit with few less miles than he does and a little less stringent on the
diet), and this is the first
vegan recipe I've made that is actually delicious.
If you're new to a
vegan diet, baking without eggs or dairy can seem like a
challenge.
I'm not
vegan, but I try to eat a plant based
diet 80 % out of the week, having grown up in cattle country it has been a
challenge, but stumbling up on recipes like this — traditional comfort food but with out the dairy is just the greatest, having moved away from my family and my grandma's cooking.
