Healthy roasted cauliflower soup slowly cooked with garlic, sweet red pepper and onion then pureed
with vegetarian broth.
I didn't have Turmeric or Cilantro but it still tasted great, also I cooked the Quinoa in
Organic Vegetarian Broth, since I added the Broth, I opted out the salt in the Red Pepper Sauce.
BROTH: The broth concentrate that I linked in the ingredients list is the
main vegetarian broth that I keep around in my pantry.
* If you don't want to use any oil, just add all raw vegetables including the mushrooms to the cooked barley with with water, spices and
vegetarian broth and cook until done.
Rich - tasting mushroom broth gives this soup its hearty flavor, though
any vegetarian broth will work here.
