vegetarian because I live
for side dishes!
Tossing it with squash noodles and sauteeing
for just a few minutes to warm everything through is all you need, and then you have a delicious
side dish or main course (pop a fried or poached egg on top
for a
vegetarian version, or a grilled chicken breast
for the meat eater in your life).
Tortellini pasta salad is perfect
for spring and summer, and it makes a great
side dish or easy
vegetarian meal.

We made this
dish as a
vegetarian side for Thanksgiving and everyone in my veggie - hating family ate it and LOVED it!
For interesting texture and a little hit of spicy sausage flair, I've added
vegetarian chorizo sausage, which — and I know this is being a little sneaky — should visually satisfy your skeptical carnivores that you're not just trying to pass off something that's less of a meal, and more of a
side dish.
They're perfect as a
side dish to a good ol' steak or as a main course
for vegetarians.
