My wife is

with Morningstar Farms crumbles instead of the beef — sauteed in chopped onions and garlic and a diced jalapeno peppper — and substitute 1 T Chili powder, 1 t cumin, and 1 t paprika, dash of salt and fresh ground pepper
with a cup of
vegetable broth for the taco seasoning.
* If you don't want to use any oil, just add all raw
vegetables including the mushrooms to the cooked barley
with with water, spices and
vegetarian broth and cook until done.
