Last weekend, Andrew and I decided to check out a new restaurant that has been said to have really good veggie burgers (side note: as vegetarians, it's our goal to always search for the best
veggie burgers out there.
While I don't doubt that there are tasty store - bought
veggie burgers out there, the particular one I ate turned me off of veggie burgers until just this year, when I tried recipes from both Ambitious Kitchen and Oh She Glows.
What I sometimes miss is convenience of packaged foods, especially the ease of pulling
a veggie burger out of the freezer and cooking it in the microwave in under...

After the last
veggie burger turned
out a little more soft than Alyssa liked, she went on a search for something a bit more chunky.
With it raining outside, corned beef in the crock pot, roasted veggies in the oven and the ingredients for
veggie burgers prepped, I'm feeling accomplished — and worn
out — this morning.
-- grilled chicken and rainbow greek salad with rice or bread or potatoes — baked maple garlic salmon with rice and some sort of green
veggie (kale, broccoli, cucumber salad)-- homemade
burgers from the freezer on the grill (every couple weeks)-- unfortunately, eating
out far too much — so so so busy!
After that I learned that I could buy
veggie burgers made
out of veggies at the store, and eventually I started making my own.
I cooked my
burgers indoors on the stove, but I'm betting these would work
out great on the grill, particularly given the fact that they don't fall apart like lots of
veggie burgers do.
I am always on the look

out how to make a
veggie burger that I actually enjoy - but it took an ah - ha moment for me to get there.
These Homemade Gluten - Free
Veggie Burgers are vegan or vegetarian, and are super easy to make, though you do have to bust
out the food processor.
I almost expected them to turn
out more like carrot hash brown patties or
veggie burgers, because the batter is so carrot heavy, but it fluffs up quite a bit during cooking, and what you end up with is definitely carrot cake.
I bought this to use in things like
veggie burgers (half mashed beans, half chopped greens, egg and flour to bind), since I am trying to keep refined flours and other carbs
out of my diet.
I'm not picky - I will grill all kinds of
