For quick and easy lunches, we make a
sandwich or a wrap about it it (just like this), but you can also use it to
top a salad, a
veggie bowl, a baked potato, or just plain all by itself!
Today we are doing
veggie burgers that taste like a slice of pepperoni pizza,
topped with oooey gooey mozzarella cheese sauce all
sandwiched between two golden brown, butter toasted buns.
These are
veggie burgers even carnivores will love, with two grilled portobello mushroom caps stacked on
top of each other,
sandwiching a surprise cheese filling.

To assemble a
sandwich, place desired amount of roasted
veggie salad on
top of a toasted slice of bread,
top with lettuce, other desire
toppings, and second slice of bread.

Veggie Sausage Patties, morningstarfarms.com) on a whole - wheat English muffin and
top with a slice of reduced - fat cheese.
