with bean - based, grain - based or
veggie - based meatballs, however, is to get enough structural integrity that you can drop them into a sauce, or even a
soup, without them totally disintegrating.

Tomatoes are technically a fruit, so it's weird to say that this vegan tomato
soup is one of my favorite
veggie soups ever, but that's what I'm going
with.
I put it mostly in
soup or pasta dishes, but have also eaten it as a
veggie with vinegar, or in a cream sauce.
I have been getting sick of my brothy winter
veggie soups and the others in my fam just have never been creamy
soup fans (much to my dismay) but nevertheless I chanced it
with this chowdah!
You can chop the cauliflower and add to a quinoa salad, or a green salad, or blend it together
with some
veggie broth to get a lovely cauliflower
soup.
This isn't just a
veggie soup, it's a hearty meal to warm up
with on a chilly winter's day!
