Running out of the moisturizer I have used for decades in a foreign country or trying to keep a eating plan when different fruits and
veggies are in season are just some of the things I've adapted to this year.

I take whatever
veggies happen to
be in season and
in my fridge, throw
in some curry paste or curry powder, something to give the dish some body like chickpeas or beans or sometimes potatoes / sweet potatoes or tofu.
And it
's so easy to make this classic comfort food dish — just chop the
veggies, cube the meat, throw it all
in the pot with the broth, wine and
seasonings... and you can just set it and forget it.
During winter I try not to buy
veggies or herbs which
are not
in season so I like to keep it simple with some good old British kale If you have any vegan cheese on hand please go ahead and sprinkle on top or just go crazy with nutritional yeast!
Asparagus
is now
in peak
season, and it
's definitely one of my favourite seasonal
veggies!
Preparing the casserole
is easy: just cut the
veggies into thin slices, lay them off

in Southern California we have access to a wide variety of produce year around, so if you
