What's in it: 1 medium - sized spaghetti

We started by chopping the
veggies for our ratatouille -
like filling for our chiles rellenos, made with carrots, zucchini, eggplant, onion, and
squash.
A typical full day of eating for me looks
like: Breakfast: Spinach, Mushroom, Onion and Tomato Frittata... sometimes with bacon or homemade sausage Iced Coffee with coconut milk Lunch (this is usually my largest meal of the day): 4 - 5 ounces of protein (turkey burger, pulled pork, chicken thighs, ground buffalo), roasted
veggies and sometimes a sweet potato or butternut
squash Snack: apple with almond butter or a handful of macadamia nuts Dinner: A large salad with all kinds of raw
veggies (cucumber, celery, carrots, cauliflower), avocado or olives, usually a lighter protein
like grilled chicken breast, salmon or shrimp This would represent a full menu... I would say I hit this about 4 - 5 days a week, other days I may omit the snack or keep the snack and omit a meal, if i do that though I would add a bit of protein with it.
I made this but added tons of
veggies — it was amazing!!!!!!!!!!!!!!!!!!!!!!!! I didn't have as much
squash and celery root so it came out more
like a broth.
In the meantime I'm doing my best to feed it lots of healthy seasonal
veggies like kale and butternut
squash.
If sweet potato, zucchini and spinach aren't your favorites, swap in other seasonal
veggies like butternut
squash and kale.
I ate random fridge leftovers,
like roasted
veggies (butternut
squash, sweet potatoes, and beets) with quinoa, daiya, and meatless meatballs.
So be careful, but go on and try some new
veggies like these spaghetti
squash boats.
I
like all the textures, soft lettuce, crunchy
veggies and seeds, substantial
squash.
You can also substitute the meat using some baked ham or prosciutto, or make it vegetarian and just add extra cheese or some
veggies like zucchini,
squash, brussels sprouts or mushrooms.
And if you have leftover honey / turmeric, its also great on sauteed
veggies like onions &
squash:)
The
squash and cabbage greens are seasonal and healthy, but you can add whatever
veggies you
like.
It's also time for the CSA to start sending us storage
veggies,

I
like to cook the chicken, onions, and peppers on the same skewers for my kabobs, but thread the more delicate
veggies (summer
squashes, mushrooms, etc.) on a separate skewer as they cook quicker.
No skins on the
veggies mostly
squashes and cauliflower (not the stem part) I
like to cook
like you do.
We
like to throw it over pasta (or black bean pasta or spaghetti
squash) with shredded or sauteed
veggies and parmesan cheese.
I try to throw some
veggies in my oatmeal
like carrots, zucchini /
squash, sweet potatoes, etc..
Now add in your garlic and any
veggies that take longer to cook,
like zucchini or
squash.
Dark green or yellow
veggies are recommended,
like squash, cooked carrots, broccoli.

Mini bites of fresh
veggies like tomato,

There are of course some

Our other menu items receive far less orders,
like our Asian - or Mexican - themed brown rice bowls with

Frozen
veggies, oatmeal (you do it just
like the rice, blend up the dry oats before cooking), fruits that I'd be cutting up for the older kids, chicken, sweet potatoes or
squash that I was cooking for dinner, leftover
veggies from dinner, whatever.
Steam, boil, or bake
veggies or fruits

squash, sweet potatoes, peas, and apples.
Root
veggies like sweet potatoes and
squash are high in fiber and other nutrients, so they're a great way to start your day.
Start by simply adding more fruits and
veggies to your diet, especially ones that have a sweeter flavor
like squashes, corn, carrots, sweet potatoes, and any fruit.
While there are gluten - free pastas now,
like rice and quinoa pasta, I wanted to find a truly real - food version and turned to spaghetti
squash and
veggies noodles.
On a practical level, this means that breakfast for me is protein +
veggies and dinner is protein + healthy carbs
like sweet potatoes or
squash.
Though I garden each year, I don't have the greenest of green thumbs and typically end up with a lot of easy - to - grow
veggies like cucumbers, tomatoes, and zucchini or yellow
squash.
Don't forget that raw
veggies have minimal caloric content, so you can make soups out of things
like kale, spinach, radish,
squash etc that will a lot of extra nutrients without much, if any, additional calories.
When you incorporate fruits, honey, nuts, and liberal amounts of starchy
veggies,
like squashes, in your diet, you'll get plenty of carbohydrates.

I love using cashews as an alternative to cream - based sauces and adding in
veggies to make it smooth and nutrient - dense,
like butternut
squash and cauliflower.
My husband is always stuffed after dinner because I serve «the four food groups»: 1) Salad with different
veggies 2) Starchy veggie
like corn on the cob or winter
squash 3) Leafy green & / or cruciferous veggie (steamed)
like kale, swiss chard, broccoli 4) Hearty bean dish
like chili or soup.
