For me, an ideal noodle dish is one in which
veggies have at least equal billing.
Fresh tomatoes are delicious here too, or basically any leftover
veggies you have at home.
Before I left, I used up all
the veggies I had at home so that nothing would rot while I was away.

would be easier since you wouldn't
have to cook the
veggies at the last minute.

at home my mom
would pressure cook dal separately and all the other
veggies separately before mashing it together.

had this kind of dish in a REALLY long time b / c of being vegan and gluten free, so my memory could be a little foggy But from what I can remember, this recipe was even better, and I love that you sub the zucchini noodles for the pasta noodles to get an even bigger dose of
veggies in this dish!
OK, here are some favorites we
've been cooking up
at my place: - vegetable curry (grind my own whole spices, use whatever
veggies we get in our weekly CSA share; radishes / beets, eggplant, squash, greens, etc)- quick kale (sauteed with coconut oil, chili flakes, garlic, [lemon grass], soy sauce, lemon juice)- pac choi w / sauteed mushrooms «chinese» style (with fish sauce, rice wine vinegar, jalepeno / chili, soy sauce, etc)- roasted radishes w / poached eggs - «teamwork pasta» — this is your recipe for pepper and cheese pasta, but it helps
having two sets of hands to make it in our house... we put an egg on this too of course - tuna pasta (chopped onion, garlic, lemon zest, chili flakes, tuna, olives — easily adaptable to what you already
have in the house and like)- roast chicken on friday - roasted sweet potatoes - omlets - challa french toast
The kids might pick out some of the
veggies, but fortunately not all of them, I take care to always
have at least two sorts that I know for sure they will eat, in this case peppers and carrots.
My roommates and I
had a bbq a few weeks ago and I may
have gone a bit overboard on the fruits and
veggies at the farmers market.
