I do like to get my kids to at least try a little bit

of mushrooms and onions.
Very tasty, I tried the wine and plain flour
version (as that's what I had to hand) and really liked it as a way
of getting crispy tasty
mushrooms.

You could choose a basic healthy
version by using a non-dairy
version of creamy soup in place
of traditional cream
of mushroom.

[breakfast] the usual veggie packed scramble with whole wheat toast and a Laughing Cow on the side, this particular scramble had spinach,
mushrooms, and orange bell pepper [lunch] a less picturesque
version of this salad, let's blame that on the extra Feta [snack] protein shake with strawberry, frozen banana, and vanilla protein powder [dinner] layered nachos (see recipe below) * unpictured snacks * half whole wheat bagel with PB, baked sweet potatoes
My best
versions of homemade anything involved many cans
of cream
of chicken soup (or
mushroom or celery...) mixed with frozen veggies, layered with other packaged or frozen foods, and topped with the magic ingredient — lots
of CHEESE — to form some type
of casserole.
In my
version, hearty crimini (baby portabella)
mushrooms, onions and garlic sautéed in butter are the base and foundation
of the casserole, while a splash
of dry sherry aids in a sweet, almost nutty undertone.
If you are looking for a more vegetable - forward
version of pasta bolognese... you can also add diced zucchini or roasted eggplant while cooking
mushrooms.
I also made this
version completely vegan (and naturally gluten free) by omitting the meat and adding LOTS
of seasonal veggies: cauliflower, delicata squash, button
mushrooms, and fresh parsley.
Granted, like I told you, she was from the «Cream
of Whatever» recipe generation, so we often had her original
version of Beef & Potato Skillet Supper or one
of those casseroles with chicken and Stove Top Stuffing covered in Cream
of Mushroom Soup.
What's in it: 1/2 butternut squash, peeled and cut into 1/2 inch cubes (about 2 - 3 cups) Prepared cornbread *, cut into 1/2 inch cubes (about 3 - 4 cups) Multigrain bread, cut into 1/2 inch cubes (about 3 - 4 cups) 1/2 small onion, chopped 2 cups chopped kale 1 1/2 -2 cups chicken or vegetable broth 2 large eggs 1/2 cup dried cranberries 4 fresh sage leaeves 3 sprigs

This is a nice one too for dinner (or lunch) Chop 2 unions and 250 grams
of mushrooms in a blender (untill it's crumbly) Than stir frie it in a pan in a little olive oil, than put in a whole Boursin (the small
version) or creamcheese with herbs.
Chicken wild rice soup is very traditional in my neck
of the woods, and your
version with those
mushrooms looks so great and I can not wait to make it!
They have a
