i've been making a
version of these with maple syrup instead
of the
agave (we ARE in VT) and it is fantastic!
The dark
version is unfiltered and therefore contains a higher concentration
of the
agave plant's minerals.
Using this sweetener added about 5 calories and 2 grams
of carbs per cookie, so if you want a lower carb
version I'd recommend using Pyure Organic Stevia Blend instead, especially if you used
agave, pure maple syrup, or brown rice syrup in place
of the VitaFiber.
