My problem is that I'm so nervous to over-flour the

The loaf that was formed after the initial kneading and baked as soon as it rose had a
very nice whole wheat taste and virtually no taste to suggest the
bread was a sourdough

I made it with Udi's gluten free
bread, which made
very nice tasting crisp

So after baking twenty minutes the
bread that had floated to the top despite soaking overnight had a
nice toast to it, the custard was set perfectly and the dish was
very well received.
The flavor is
very mild and doesn't overcome whatever I place on the
bread (peanut butter, pimento cheese, butter and jam, etc.) I keep the
bread slices in the refrigerator and mainly use it toasted, so the crunch from the chia seeds is a

bread (made in a standard loaf pan) was only about 2 ″ high, but the taste and texture were
very nice — not gummy.
By using the method I describe, you can also successfully make
bread rolls, and use the dough base for specialty
breads such as the Italian foccacia and
