Use a medium size ice cream scoop (about 2 - 3 tablespoons), fill batter to
the very top of each muffin cup.

This
of course tastes delicious, however, it's combination
of this soft base against the crunchy oat, date and pecan
topping that really makes these
muffins very special.
The wee bit
of glaze on the
top of each
muffin is just as simple as could be (to confectioners» sugar, add water 1/4 teaspoonful at a time until you have a
very thickly pourable glaze), and is mostly because the gingerbread
muffins were looking for a little jingle, a little bling to look like they were in the spirit.
If you want to add an extra boost
of banana flavor, you can
top each
muffin batter with 2 - 3
very thin slices
