I took a little diversion from the rest of the virtual baby showering tribe
in creating a
waffle recipe.
If you are
in the habit of having guests for breakfast or feeding a large number of family members, this would be a good
recipe to try because it's ready all at once (unlike pancakes or
waffles or omelettes which cook one or two at a time) and can be eaten with your hands....
But, as you've seen
in some of my
recipes (pancakes and
waffles) there is this fabulous culinary find: aquafaba.
I wanted to make an easy breakfast
recipe using the fresh summer berries from my CSA so I decided to switch out the Pumpkin
in my Pumpkin
Waffles with strawberries.
Quick question: how do you think this
recipe would fair
in a

My daughter made a lemon curd for a different
recipe and used the left over on the
waffles and it was so delicious along with the fresh blueberries
in the
waffles I will be making these over and over.

waffle maker, this
recipe yielded 3 8 - by -10-inch
waffles, which break up into 18 smaller rectangles, which I'd say serves 4 to 6.
These
waffles alone are delicious, but throwing blueberries
in the mix puts this
recipe over the top!
This
recipe is a double (a single batch yielded a weird 1.5
waffle sheets
in my iron) plus two extra eggs (basically, one per batch) and two extra tablespoons flour.

I am a total food snob so I totally get this But also have hungry kids yelling at me
in my kitchen, LOL I hadn't thought about freezing
waffles ahead, great idea and I will definitely be trying this
recipe!
