Because i have a laundry basket of butternut and acorn squash, and i'm inclined to take a day to just process it all, rather than spending the time to hack it up every time

As a kid,
alfredo sauce was typically reserved only for special occasions, so now that I'm an adult, the inner - child in me is going wild knowing I can have it whenever I
want, wherever I
want, and no one can tell me otherwise.
That sounds pretty good, but I didn't
want to add the extra fat, and didn't have a jar of
alfredo sauce in the pantry, so I went with half and half instead.
This recipe is inspired by the Olive Garden dish of the same name, and it's one of my favorite dishes to order there (you know, when I actually
want something other than just bread sticks and
alfredo dipping
sauce, because I can totally make a meal out of that).
However, I didn't
want to use jarred
alfredo sauce so I used the Fettuccine
Alfredo from Cooking Light.

I do know that vegans don't eat meat of course I
wanted to create an
alfredo sauce that was dairy - free, but I went the vegan route so that it would appeal to more of my readers.
It really meld into anything you
want it to be from super creamy
alfredo type
sauce, to a low carb stand in for mashed potatoes to chicken wings to a grain in salads!
