I don't
want the carbs — they make me ill, and
coconut flour doesn't because it's super low in carbs (
fiber doesn't count, and
coconut flour can be around 60 %, depending on the brand).
Instead of a grain - based flour, I used
coconut flour since it's light, low in fat, easy to digest, and high in
fiber which makes it perfect when you need extra thickness in a recipe and you don't
want to rely on a gluten - containing flour.
These little muffins are a great source of
fiber (
coconut flour) and fat (
coconut flour, healthy oil, and eggs), but unless you
want the whole pan gone in one shot, here are some fast side items to balance out the plate.

Coconut oil (Virgin) you are using is not the same as Raw
Coconut (Oil) which has the
fiber in it at the bottom and is sometimes referred to as
Coconut Butter.
