Chicken Shawarma is a traditional Middle Eastern dish that is usually served on
warm flatbread topped with a savory yogurt sauce.

flatbread is definitely towards the
top for me, I love just eating it
warm by itself especially if it has this much flavor going on inside already
Brush garlic oil (
warm 2/3 cup olive oil, 1 minced shallot, 1 minced garlic clove, and 1 sprig fresh thyme in a pot set over medium - low heat for 10 minutes) over baked
flatbread and
top with goat cheese, baby kale, and heirloom baby tomatoes that have been tossed with a teaspoon of the garlic oil.
To serve:
Top each
warm flatbread with a dollop of the herbed crème fraiche, a few slices of the prosciutto, and a handful of the red grapes.
The
flatbread pizzas (I used Naan for the bread since they hold up so nicely on the grill) were quickly
warmed up on the grill then taken off and
topped with a shmear of fresh pesto, the sauteed mushrooms and of course cheese.
For more of a «meal» than a salad, I served this creation on
top of a
warm flatbread pizza.

Highlights include a Sonoma pizzeta, which incorporates roasted peaches, goat cheese, speck and saba; a Granchio bruschetta which features crab, jalapeño pesto, avocado, grapefruit and mint; a Tuscan White Bean & Rosemary dip made from Castelvetrano olives
topped with salsa verde and served with
warm flatbread; and Artichoke Fonduta made from goat cheese, lemon, basil and crispy bread.
