muffin cup and place them in a
warm place and let it rise again under cover
for about 30 minutes.
But, I did freeze most of this batch of
muffins and they've been reheated very well, even defrosted /
warmed inelegantly in the microwave, as we did when we got home famished from the airport at 10:30 Saturday night and were too tired / exhausted
for a real dinner!

Every once in awhile, though, Mom would make blueberry

If you have difficulty removing the frozen treats from the
muffin pan, just flip the pan over and run
warm water on it
for a few seconds.
Cool
for 5 minutes in the
muffin tin, then remove and place on a wire rack to cool completely or serve while still
warm.

muffin tin (dividing into 12 portions evenly) 8) Bake
for 20 to 25 minutes or until a toothpick inserted in the center comes out clean and
muffins are golden on top 9) Serve
warm
Let cool
for a few minutes, remove from
muffin tin and serve
warm.
Just pop a frozen one directly into your microwave and zap
for 20 - 30 seconds
for a
warm, moist, spicy apple
muffin ready to enjoy.
(This was great
for texture... just like wheat berries in WW
muffins) 1 pkg Active Yeast 1/4 tsp salt 3/4 tsp baking soda 1 tsp xanthan gum 3/4 C
warm water 1 tsp honey 2 Tblsp almond oil.
You turn the oven on
for just a few minutes to let it get
warm, then turn it off and put the
muffins in there to rise.
I haven't tried that part myself, since I like my
muffins even when they're not fresh out of the oven, but I can see how it would be useful
for those who are rushed in the morning, and who like nothing more than to bite into a still -
