Fill a baking dish or large glass measuring cup with 3 cups boiling water, place it in the oven beside the dough, and close the door — this will make a nice
warm proofing box for the dough.

Preheat the oven to 400 degrees to
warm it up as a «hot
box» for the pizza dough to
proof.
Leave it to
warm up a bit for 20 minutes or so, then scoop into individual portions and lay each in a large freezer -
proof box.
I don't have a
proof box so it took a bit longer for the rise portions as it's December and not
warm enough for it to happen in the normal timeframe.
