change I made was to

There are a few things that could cause the caramel to be too runny: — adding
water to the sugar for the caramelisation part (in this recipe, you melt and caramelise the sugar with no
water added; if you do add
water, it might end up runnier), — not «caramelising» the sugar enough (but that
changes the consistency by only a few percent), — not cooking the butter and caramelised sugar mixture long enough (it really needs to be a few minutes), — not
using double cream but whipping cream or something with a lower fat content, — not allowing the caramel to set in the fridge for a few hours (the caramel should set into a sticky layer that should be able to be cut and isn't runny).
I
used 2 tbls of worchestershire sauce and 1 tbls of
water to make a 1/4 cup and it did
change the taste but in a pleasant way.
The only
change I'd make is to cut the amount of soy sauce (maybe 1/2 soy sauce 1/2
water) if
using vegetable broth because they are a bit salty.
I
use mine in my coffee, put 2 teaspoons in a mug add a little cold
water stir, leave for a minute or two, stir again and pour on boiling
water, add instant coffee and voila gelatine coffee, no
change to the taste, but adds a lovely silky texture.
Made these today with a few
changes: — left out stevia —

use low sodium tamari or soy sauce — orrrrr, it may
change the flavor a bit, but maybe
water down 1/3 to 1/2 of the amount of soysauce with some concentrated unsalted veggie broth.

My only recipe
change was to
use veggie broth instead of
water to initially cook the tempeh.
